- Pasteurize the milk to 65 degrees for 30 minutes, reduce it to 32-35 degrees and keep the temperature constant throughout the coagulation.
- Dissolve the powder (cheese) in a little clean water along with a teaspoon of salt and pour the solution into the milk, stirring well 2-3 minutes.
- Dissolve only as much rennet as you need at a time.
- In 45-60 minutes place the curd in a bag or perforated molds.
- Drain and invert 2 times from 1 hour or more time until the cheese thickens.
- The box of cheese should always be closed and in a dry and cool place.
